Grilled Walleye with Citrus Butter Sauce

 

Makes 2 servings

Ingredients

  • 2-4 oz. fillets Walleye or any other light tasting fish
  • Salt and pepper

For Citrus Butter Sauce

  • 4 tbsp butter
  • 1/4 cup dry white wine or chicken stock
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh orange juice
  • 1/2 tsp minced garlic
  • 1 sprig fresh oregano
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Directions

  1. Heat wine, lemon juice, orange juice, oregano sprig and garlic over low heat in a saucepan. Bring to a simmer and cook for 3 minutes. Add butter 1 cube at a time until melted. Simmer for 2 minutes longer.
  2. Turn heat off and season with salt and pepper. Discard oregano sprig.
  3. Heat a cast iron grill pan over medium and grease with cooking oil. All pan to heat for 2 minutes. Blot walleye with paper towel to remove excess moisture and season flesh with salt and pepper.
  4. Place walleye on skillet flesh side down and grill for 4 minutes. Flip and turn for 3-4 minutes longer or until cooked through.
  5. Serve hot drizzled with citrus butter sauce And garnish with sliced oranges.
